Food Safety


The Laboratory for Food of Animal Origin (LAOA) is in charge of food safety and provides technical and scientific support to the official control authorities, to agrifood business operators and to consumers in order to protect the safety of food intended for human and animal consumption. The Laboratory ensures the monitoring and surveillance activities, providing technical consultancy for the identification of risks in food and feed. It carries out research for the development of specific and innovative diagnostic methods, and for the risk analysis to establish the level of food safety and identify valid, measurable and verifiable objectives for the health protection. It collaborates with European Union Candidate Countries to adapt their national legislation as well as the operating criteria of their laboratories to the EU requirements in order to comply with the European legislation. All the LAOA activities are carried out in collaboration with Italian and international scientific organisations.

The LAOA is composed of four departments, carrying out analytical investigations for the research of biological, chemical and physical contaminants:Bacteriology and hygiene in the production of milk and dairy products;

Bacteriology and hygiene in the production of milk and dairy products;

Bromatology and residues in food for human and animal consumption;

Hygiene in food technology and animal feed.
