Food Safety Laboratory Presentation

 

On October 19th, 2011, a press conference was released to present the Institute's new high-containment biological laboratory, which allows for the study of pathogenic microorganisms within the food production process.


The establishment is the first in Italy to host high-tech tools and machineries of American production (Biobubble, Colorado). It extends over 500 square meters of land and permits to document product safety, starting from the traditional territorial ones.

The laboratory is divided in different sections, i.e., cold meats, dairy, and home treatments. In it, it is possible to operate within bio-protection thanks to air filtration and water purification systems as well as the sterilisation of all materials used throughout transformation processes.


In essence, the Institute's experts contaminate food with pathogenic organisms during the transformation process, in order to study the reaction of foodstuffs. The laboratory's results and documentation on foodstuffs safety will be used to promote exportation, according to the requirements of international treaties.


This laboratory is managed by Alimentaria, the newborn Institute's Foundation, conceived to respond, according to legal requirements, to the increasing demand for research and analysis in the food safety sector, on behalf of various national and international food companies.
